Ever wondered why saffron costs more than gold per gram? It takes over 150,000 crocus flowers to produce just 1kg of saffron. Each flower only contains 3 delicate red stigmas which must be handpicked at dawn.

In India, Kashmiri saffron (Mogra) is the most expensive variety because of its high crocin level (above 8.5). When buying, expect to pay a premium for "G.I. Tagged" Kashmiri saffron as it guarantees the origin and quality. Avoid "cheap" saffron deals as they are almost always adulterated.
